
The drying process is a crucial step in gummy production. After depositing the gummy mixture into moulds or trays with starch, they must be dried to achieve the right firmness and stability. Drying typically takes place in a controlled environment where temperature, humidity, and airflow are carefully monitored. Since this process involves more than just drying, we refer to it as Conditioning.
Key Steps in the Conditioning Process:
- Initial Setting: Freshly deposited gummies begin to set as they cool.
- Pre-Drying: Excess moisture starts to migrate in a low-humidity environment.
- Final Drying: Gummies are exposed to a specific humidity level and temperature for several hours or days, depending on the formula.
- Conditioning: After demoulding the gummies can be further stabilized to ensure uniform texture and prevent stickiness.
